Greek salad on top, Mexican salad on the bottom

This is one of my “I can’t be bothered to cook” recipe. Yes, it happens to me too! Sometimes I’m in a rush, or I’m super tired, I haven’t had the time to go grocery shopping but I still need to eat something. The great thing about this recipe is that it almost only requires canned goods that you hopefully have in your cupboards already.

Ingredients:

  • 1 can/jar of black beans or kidney beans
  • coriander (I buy frozen coriander so that I always have some in my freezer)
  • 1 can/jar or corn
  • 1 ripe avocado
  • olive oil
  • apple cider vinegar
  • salt and pepper

Instructions:

  • Just mix it all together! I love when the avocado is mashed so that it acts as a bit of a binder. As for the amount of olive oil & apple cider vinegar, add what you would for a regular dressing.
  • Enjoy!
