By now you’ll know that greens are really nutritious and that they are good for you. Among them, the one that benefits from the best media-coverage for its health benefits is kale and we can therefore find it in every grocery store whether it’s a health-food store or a regular supermarket. But sometimes we buy kale and end up not knowing what to do with it! I’ve been there, but now I’ve got a few go-to, quick & easy recipes that I’m sharing with you 🙂

Raw Kale Salad

Prep: 7 min

This recipe requires no cooking time at all as you’ll eat the kale raw, and therefore get all the vitamins, minerals and phytonutrients unmodified by heat for optimum health benefits!

  • Take how much kale you fancy and remove the stems
  • Chop the leaves into smaller pieces
  • Rinse them in a sieve and wring them well
  • Put them in a big bowl
  • Prepare your tahini-lemon sauce
  • Pour the sauce on your kale and mix it all together so that all the leaves are well coated
  • Enjoy!

Green Smoothie

Prep: 3 min

This recipe is made for the ones that don’t really enjoy the taste of kale (the sweetness of the fruits will make it unstable really), or need to get their vegetables as soon as breakfast time. Again, no cooking time at all and optimum health benefits!

  • Take 3 or 4 leaves of kale and remove the stems
  • Chop the leaves into smaller pieces
  • Rinse them in a sieve and wring them well
  • Put them in your blender/food processor
  • Add 1 chopped banana, 1 chopped apple, 1 small avocado
  • Blend, then enjoy!

Kale Chips

Prep: 5 min

This one will make you and anyone love kale! Kale chips are perfect for a dinner with friends or to enjoy as a snack. And you’ll need just 3 ingredients – amazing, right?

  • Preheat your oven to 200°C
  • Take how much kale you fancy and remove the stems
  • Chop the leaves into smaller pieces
  • Rinse them in a sieve and wring them well
  • Put them on a parchment baker on top of a baking tray
  • Drizzle a generous amount of olive oil and add salt
  • With clean hands of course, “massage” the kale to make sure every leave is coated with oil
  • Bake for 10 minutes
  • Enjoy!

Kale Stir-Fry

Prep:10 min / Cooking: 10-25 min

  • Put olive oil, chopped onions, thinly chopped fresh ginger and chopped garlic in a saucepan on a low heat. Add spices (I love using cumin, smoked paprika and turmeric) and vegetable stock
  • Add your chopped veggies of choice including your kale and add salt & pepper
  • Let everything cook mixing them every 1 to 2 minutes
  • When it’s all cooked, add fresh lemon juice on top, and mix one last time
  • Enjoy on its own or with grains (quinoa, buckwheat, brown rice…)
