I’m back with another what I eat in a day, yay! It was a very busy week day so I chose recipes that are really easy to make.

For breakfast, I had my usual cup of tea. But, instead of my traditional green or white tea, I fancied black tea for once. This is so good and reminds me so much of when I got into tea that I need to get back to it sometimes! With it, I also had a cold porridge. I just poured oats, chia seeds, cinnamon, turmeric, a banana and rice mylk in a bowl and mixed it all together. It’s as simple as that! And super-feeling. And delicious of course 😉

Lunch was nearly as easy as brekkie. I fried onions and garlic in olive oil, then added lentils and then water, let it cook for 25 minutes and added raw tomatoes and pepper that I chopped in the meantime. I love cooking lentils because while they’re cooking, you can live your life and do whatever you fancy (or have to do in my case…). A quick tip: let your lentils simmer on a low heat. They’ll take a bit longer to cook, but you won’t end up burning the bottom of your pan (which happened to me so many times because I was lacking patience!).

And finally, dinner time! I’m not just recycling recipes (I posted it on my blog a few weeks ago), I love it so much that I have to have it at least once a week at the moment! This is my Lebanese taco (kind of), which is basically a buckwheat crepe with parsley, feta, tomato, onions and lemon tabouleh. Trust me, you want to try it!
