Happy Saturday everyone! Here I come on my birthday (yay!) with another What I Eat In A Day post. Hopefully you’ll find it interesting and it will give you some ideas.

1. Breakfast

Yes, you guessed it, porridge! Like pretty much every single day! But this time, I really needed something even more comforting than a regular porridge. Something to indulge on. And of course I went for cacao and chocolate porridge! To make it, I just pour whatever amount of oats I fancy that day in a pan on a low heat, with a little bit of plant milk and hot water, one or two tablespoons of raw cacao powder (depending on how much oats I’m having), a tablespoon of coconut sugar and I keep stirring until the oats finish drinking all the liquid up. Once served in a bowl, I add pieces of dark chocolate which I usually put not on the surface, but deep into the bowl, so that it can melt and give this even more rich and chocolaty flavor that is to die for!!


2. Lunch

As I’m working for home, I always manage to do something quick and easy, so that I don’t spend hours in the kitchen, forgetting that I’m actually supposed to work! So this is an easy one: I cooked some quinoa in boiling water and a little bit of apple cider vinegar. During that time, I chopped a clove of garlic, one big onion, runner beans and sun-dried tomatoes. I put everything in a pan with olive oil and let it fry for about 10 minutes. Once the quinoa was cooked, I mixed it with the veggies and here’s the final result! As per usual, after having this glorious lunch (again, it was a huge portion) and an apple for dessert, I had a peppermint herbal tea.


3. Dinner

And finally for dinner, I felt in the need for something fresh. I began by roasting some chickpeas coated with olive oil, garlic, cumin, smoked paprika, fresh herbs, salt and pepper. Waiting for them to roast, I chopped a romaine lettuce, seasoned it with olive oil, apple cider vinegar, salt, and pepper, and I added sesame and flax seeds on top. Once they were cooked, I added the roasted chickpeas and mixed everything together… and voilà ! To go with it, I also made a soft-boiled egg, and again I had an apple and a herbal tea (chamomile this time) for dessert.
