Greek salad on top, Mexican salad on the bottom
This is one of my “I can’t be bothered to cook” recipe. Yes, it happens to me too! Sometimes I’m in a rush, or I’m super tired, I haven’t had the time to go grocery shopping but I still need to eat something. The great thing about this recipe is that it almost only requires canned goods that you hopefully have in your cupboards already.
- 1 can/jar of black beans or kidney beans
- coriander (I buy frozen coriander so that I always have some in my freezer)
- 1 can/jar or corn
- 1 ripe avocado
- olive oil
- apple cider vinegar
- salt and pepper
- Just mix it all together! I love when the avocado is mashed so that it acts as a bit of a binder. As for the amount of olive oil & apple cider vinegar, add what you would for a regular dressing.
