During my journey of changing the way I eat, I was seriously lacking meal ideas. Especially as I never ever used to cook myself before – I relied on my mother, who is an amazing cook! But when I had to move out to study in Paris, I found myself in the urge to learn how to cook. And it coincided with me wanting to change what and how I ate, which made it even more difficult.

So, once I’d learnt the basics, which took me a good few months (not to say years!), I wanted to vary my food to keep meals interesting and enjoyable. But I found myself quite alone, as healthy eating was not as popular as it is nowadays. Until I began looking online and found Deliciously Ella.

Of course her blog is one of the first that inspired me to cook even more delicious and healthy meals. Everything seems and actually is so easy to make, and tastes amazing. What I like about her recipes is that they really are every day appropriate: quick, easy, with simple ingredients. If most of them aren’t revolutionary (except for desserts and sweet treats that she taught me to make vegan), they gave me the inspiration I was lacking, and showed me how to use some ingredients with healthy benefits I had in my cupboard but didn’t really use like apple cider vinegar, which I can’t cook without now!

I became a real fan of hers, and began to purchase her books* (I am so beyond excited for her new book released at the end of January 2017 by the way!) and watching at her videos on YouTube. I even went to London last June to meet her and other healthy food business people at Good Roots Festival, where the picture above was taken. I still have to test her Mae Delis** out though (I can’t wait to my next week-end getaway in London!).

Some of her recipes have actually become my go-to, like her quinoa tabouleh, her sesame oil massaged kale, or her easy ratatouille. See, very simple meals but rightly seasoned with good oils, seeds, spices or apple cider vinegar, which are game-changers!

I don’t know her personally, but what shows through her content is that she is a very positive and humble person and that will make you love her recipes even more!
