Think soup, but fancier. And so easy to make. If you like coconut, you’re going to love it!

Ingredients for 2 people:

  • 1 can of coconut milk
  • double the amount of water
  • 1/2 thumb of fresh ginger root
  • 1 onion
  • 2 garlic cloves
  • 2 heaped teaspoons of turmeric
  • handful of coriander (fresh or frozen)
  • a few pieces of lemongrass (fresh or frozen)
  • juice of 1/2 or 1 lemon
  • 1 tablespoon of coconut oil
  • salt & pepper

Instructions:

  • Chop the ginger, onion and garlic in small pieces
  • Put the coconut oil in a pan on a low heat and wait for it to melt
  • Add the chopped ginger, onion, garlic & turmeric and mix everything. Let it cook for 2 to 5 minutes, mixing it every now and then and checking nothing is turning brown
  • Then add the coconut milk, water, salt & pepper. Put the lid on and let it simmer for 10 minutes
  • Remove the lid and add the lemongrass and coriander
  • Let it cook for another 2 to 5 minutes
  • Add the lemon juice, mix, and serve right away

I love having this soup with a stir fry on the side with whatever vegetable I have in my fridge and nuts I have in my cupboards.
